The 2017 Cobalt Cabernet Sauvignon exhibits dark, rich Spring Mountain fruit balanced by subtle tannins and well integrated oak. Notes of blackberry, blueberry, and mocha greet the palate, followed by lingering notes of dark chocolate and nuances of baking spices. The complex flavor and structure of this wine is rounded and refined by 24 months of barrel aging in 75 percent new and 25 percent one- time used French oak. It is drinking beautifully now but will continue to age gracefully 10-15 years. This blend exemplifies the balanced and terroir-driven wines that we strive to produce vintage after vintage.
